Recipe: My Damn Good Apple Pie, aka Mom's Apple Pie

Everyone loves to eat my pie & my kids are always requesting the recipe.
​Some day I'll write the damn recipe book they've asked for, but for now, I'll post this here for when they need it.

*More pictures at bottom to illustrate steps
*Makes (2) 9 inch pies

Ingredients:

FOR FILLING
3-4 Apples (Gala, Fuji, or Pink Lady)
1 Cup Powdered Sugar
3/4 Cup Brown Sugar
1 Tbsp Flour
1 1/2 Tsp Cinnamon
1/2 Tsp Nutmeg
5 Tbsp Milk (or Heavy Whip Cream, or Half & Half, or, in a pinch... I've used Coffee Creamer (usually a Vanilla or Caramel Flavor))
2 Tbsp Melted Butter
1 Tbsp Vanilla

FOR CRUST
2 Refrigerated Pie Crusts, at room temperature- 2 boxes/4 rolls total (yeah, I don't know how to make pie crust from scratch, nor do I have time for that when I'm usually making a shitton of pies) 
1-2 Tbsp Melted butter
Granulated Sugar (a few pinches, see step #12)

Directions:

*Preheat oven to 350°
1: Peel Apples, then cut into 1/8ths
2: Trim off centers from each slice
3: Cut each slice into 3-4 sections (nickel to quarter size)
4: Place in bowl, cover with water, cover bowl, let sit until apples float at top of water, then drain.
5: Add ALL FILLING ingredients to drained apples, and mix well.
6: Let sit in a cool area for 1-2 hours, but NO MORE than 8 hours, if refrigerated.
7: Unroll 2 pie crusts and press/cut to fit two 9" pie pans, setting 2 crusts (unrolled) aside
8: Fill both pie pans with Apple Pie mix, chunks first, then evenly distribute the remaining liquid between the two pies.
9: Unroll the other two pie crusts and place one each on top of the two filled pies.
10: Cut/Trim excess pie crust that hangs over, and then pinch together top & bottoms in the method you prefer.
11: Slice top of crust with vent holes. I like to do an "A" in the middle, with 8 additional slits around the perimeter so the "A" is basically in a sun shape. But sometimes, if it's for a birthday pie, I'll cut slices to say Happy Birthday-whomever.
12: Using a pastry brush, brush melted butter all over crust, then "dust" pie with granulated sugar.
13: Bake for 45-50 minutes, or until pie crusts are golden brown.

*If baking pies in an oven where the two pies cannot share the same position side by side on the rack, switch their placements about halfway through AND REGARDLESS, DEFINITELY TURN THEM at the HALFWAY MARK.
